This delicious naturally gluten-free and vegan apple tart is sweetened with Foodin coconut sugar and spiced with the flavors of autumn: Foodin Ceylon cinnamon and cardamom. Enjoy homemade vanilla sauce with the tart. 

INGREDIENTS

Crust: 

1,5 dl (70 g) Foodin almond flour 

1,5 dl (75 g) gluten-free oat flour 

1 dl (65 g) Foodin white rice flour 

1,5 dl (80 g) Foodin coconut sugar 

1 tsp Foodin Ceylon cinnamon 

1 tsp Foodin cardamom 

0,5 tsp baking powder 

0,5 tsp baking soda 

0,5 tsp Foodin salt 

2 dl Foodin coconut milk 

0,5 tbsp Foodin apple cider vinegar 

50 g vegan butter (room temperature) 

3-4 apples sliced (depending on the size of the apples) 

Foodin Ceylon cinnamon 

Vanilla sauce: 

1 dl Foodin coconut milk 

0,75 dl Foodin cashew butter 

1 tsp Foodin xylitol (birch) sugar or 2 tsp Foodin coconut sugar 

¼ tsp Foodin vanilla powder 

Pinch of salt 

RECIPE

Preheat the oven to 180 C. 

In a bowl, mix together the flours, coconut sugar, cinnamon, cardamom, baking powder, baking soda and salt. Add the coconut milk, ACV and vegan butter. Fold the batter gently together until it’s even. 

Spread the batter on a 22 cm baking dish. 

Place the apple slices on top and sprinkle with cinnamon. 

Bake the tart for about 30 minutes or until a toothpick test comes out clean (a few crumbs are ok). 

Mix the vanilla sauce ingredients together. Taste and adjust sweetness or salt (the salt balances the flavor). 

Enjoy the tart with the homemade vanilla sauce either warm from the oven or cold after storing it in the refrigerator.
