CACAO PASTE IS AN ESSENTIAL FOR BAKERS
Cacao paste is an absolute necessity when preparing raw chocolate! Ground from cacao nibs, cacao paste is a velvety chocolate experience that is easy to use as bites, crumble or melted in desserts and smoothies. You can make your own raw chocolate from cacao paste, melt it into a sauce to add to desserts, crush it and decorate cakes, or add a sprinkle into muesli, granola or raw porridge.
Like cacao powder, cacao paste can also be used in savoury cooking. In many countries, chocolate is used in marinades and spice rubs as well as sauces and pot dishes.
ORIGIN
Foodin’s cacao paste is prepared from cocoa beans that grow under the South American sun. The history of our Criollo variety cocoa beans take us to the depths of the Amazonian rainforest, where small family farmers grow cacao beans sustainably and according to ethical guidelines. Cultivation methods are developed by providing training and an optimal setting for cacao farming, and our sourcing partners are in close cooperation with the farming communities. This way, the farmers are guaranteed a fair wage, and their children are able to go to school. This ensures that typical problems of mass production, including child labour, are better supervised.
Our sourcing partners are responsible for execution of the education, health care and other supporting functions that create wellbeing in the farming communities. The Organic Certificate ensures that the environment, people and animals are treated just and fair. Our partners have the SPP Certification that ensures funds for the children’s schooling and enables supervising guideline compliance.
PREPARATION OF CACAO PASTE
Ripe cacao beans are fermented for 4-5 days, during which the aromas of cacao develop and they turn from a shade of purple to a lovely brown. After fermentation the beans are dried, after which they are ready for use and further processed into cacao paste. Cacao paste is produced in our own Vaajakoski factory in a stone ground mill by grinding cacao nibs.
Manufactured in a factory that handles gluten-free oats, nuts (cashews, Brazil nuts, pecans, macadamias, hazelnuts and walnuts), almonds, sesame seeds and milk protein.
