Millet porridge made from Foodin millet is a soft and gentle breakfast. With Foodin coconut milk the porridge becomes a creamy and delicious delight, which can also be transformed into a layered porridge jar or smoothie. 

INGREDIENTS

4-6 portions 

3 dl Foodin millet 
8 dl water 
1 pack (3,3 dl) Foodin coconut milk + more to make the porridge softer 
2 tbsp Foodin coconut sugar 
1 tsp Foodin ground cardamom
a heaped ¼ tsp Foodin Himalayan fine crystal salt 

Porridge toppings: berries, Foodin nut butters or Herkkuisa, Foodin shredded coconut and raw chocolate.

RECIPE

Rinse the millet in cold water and add to a saucepan together with water and coconut milk. Bring to a boil and simmer on low heat under the lid for 15-20 minutes or until the millet has softened. Mix about 1 dl coconut milk, the coconut sugar, ground cardamom and salt to the porridge. Take it away from the heat and let simmer under the lid for another 5 minutes. If the porridge feels too thick add more coconut milk or and/or water. 

Enjoy the millet porridge with toppings or let it cool and serve as a porridge jar or smoothie.
