These pancakes can be called one-ingredient pancakes since they are made of only one main ingredient: Foodin red lentils! Soak the dry lentils overnight and then blend the rinsed and drained lentils with Foodin quinoa flour, water and salt into a smooth pancake batter.  

Fry the pancakes in olive oil to get a crispy crust. Enjoy these protein rich pancakes with Foodin Curry dip, vegetables and herbs. You can also serve the pancakes as part of meal, such as a curry-based dish.  

INGREDIENTS

About 20 small pancakes 

Pancake batter: 

2 dl Foodin red lentils 

0,5 dl Foodin quinoa flour 

1,5 dl water 

½ tsp salt 

Foodin Extra virgin olive oil for frying 

For serving: 

Foodin Curry dip 

vegetables and herbs 

RECIPE

Soak the red lentils overnight in water. The next day rinse and drain the lentils well and blend them together with the quinoa flour, water and salt into a smooth pancake batter.  

Scoop about 1,5-2 tbsp pancake batter per pancake. Fry the pancakes in a generous drop of olive oil for about a minute per side or until the pancake is easy to flip. Repeat until all pancakes are ready. 

Enjoy the pancakes warm with Foodin Curry dip, vegetables and herbs or as part of a meal.
