INGREDIENTS

Pesto:
1 dl Foodin walnuts
2 packs of fresh basil
1 dl Foodin olive oil
1 dl Foodin Paramesan
2 tbsp Foodin apple cider vinegar
2 cloves garlic
Salt & Pepper
Water

Pasta:
1 yellow onion
1 tbsp Foodin olive oil
200g pasta of your choice
1 zucchini
100g arugula
2 tbsp Foodin Paramesan

RECIPE

Start by adding all the ingredients for the pesto to a blender. Add more water if needed until you reach a creamy pesto. Set aside.

Cook the pasta in salted water.

Chop the onion and fry in olive oil until golden. Slice the zucchini and add to the pan, fry until soft.

Drain the pasta and add to the pan along with as much pesto as you wish. Serve with arugula and Paramesan.
