The most delicious buns are filled with Foodin Herkkuisa raw chocolate spread! These gluten-free buns are made from three gluten-free flours: Foodin light rice flour, Foodin almond flour and gf oat flour. The dough is sweetened with xylitol, which is very similar to regular sugar, but a much healthier option. The dough is spiced with the lovely aromatic Foodin ground cardamom.  

INGREDIENTS

3 dl (180 g) Foodin light rice flour
2 dl (85 g) Foodin almond flour
1,5 dl (75 g) gluten-free oat flour
1,5 dl (135 g) Foodin xylitol
2 tsp Foodin ground cardamom
1,5 tsp baking powder
¾ tsp salt
1 pack (11 g) dry yeast
1,5 dl Foodin coconut milk
2,5 dl water
3 tl Foodin psyllium powder
50 g melted (vegan) butter 

Filling: Foodin Herkkuisa and optional: (plant-based) whipped cream  

RECIPE

Preheat the oven to 225 C. 

Combine all the dry ingredients (except the psyllium powder) in a bowl. 

Warm the coconut milk and water a little over 42 C. The liquid will cool a bit and it needs to be 42 C for the dry yeast to activate. Whisk in the psyllium powder and let set for a few minutes. Mix the liquid together with the dry ingredients and add the melted butter last. Knead the dough until all is combined. 

Roll small buns and place them on a baking sheet covered with parchment paper. Use water to help with the rolling; the dough is supposed to be quite sticky. 

Let the buns rise for 20 minutes and bake them in the oven for 12 minutes or until the buns are golden brown from the bottom. These buns will not become golden brown from the top, they are supposed to stay quite light. 

Let the buns cool before cutting them in half and spreading Herkkuisa generously between the layers. You can also add whipped cream together with the dreamy Herkkuisa.
