Goi Cuon summer rolls a la Foodin are filled with colorful vegetables, shirataki noodles and dry roasted spiced cashews. Dip the summer rolls in a umami rich sauce seasones with ginger and curry powder.

INGREDIENTS 

Sauce 

1 dl Foodin almond butter 

1 dl water 

2 tbsp Foodin umami sauce 

2 tbsp Foodin lemon juice 

1 tsp Foodin ginger powder 

1 tl Foodin mild curry powder 

½ tsp salt 

 

Summer rolls 

Rice paper about 10 pcs 

Shirataki noodles 1-2 packages 

2 bags of Foodin cashews such as Chili garlic ja Curry lemon 

Colorful vegetables such as bell peppers, cabbage, cucumber, avocados, lettuce, herbs 

Foodin sesame seeds

RECIPE

Mix the sauce ingredients together in a bowl 

Cook the noodles according to package directions. 

Chop the vegetables into thin slices. 

Moisten a kitchen cloth and spread it evenly on a surface. 

Soak a rice paper for about 20 seconds or until soft. 

Place it carefully on the kitchen cloth. 

Add herbs, vegetables, noodles and cashews in the center and fold the rice paper into a tight (but not too tight) package.  

Repeat until all the rolls are ready. 

Sprinkle sesame seeds on the rolls. 

Dip the rolls in the sauce and enjoy! 

Tip: You can also fry the rice paper rolls in oil before eating them. Cook for a few minutes per side or until crunchy and golden.
