INGREDIENTS

1 pack / 250 g of Foodin dates

2 dl Foodin coconut sugar

3 dl water

200 g Foodin ghee

2 eggs

1 tsp Foodin sea salt

1 tsp Foodin vanilla powder

1 tsp Foodin cardamom

1 tsp baking soda

1 tsp baking powder

3 dl dark rice flour

RECIPE

Preheat the oven to 175°C. Add the dates, coconut sugar, and water to a pan and let simmer on low to medium heat for about 15 minutes until the dates are soft. Blend the mixture with a hand mixer until smooth. Melt the ghee and mix it with the date mixture along with the eggs. Add the salt, vanilla, cardamom, baking soda, baking powder, and rice flour, and mix until the dough is even. Grease your cake mold with melted ghee and pour in the dough. Bake in the oven for 30-40 minutes. Allow to cool completely before enjoying. Store in the fridge for up to a week.
