This energizing fresh citrus salad with a wonderful vinaigrette brings joy to grey winter days. Enjoy this easy-to-make salad on weekdays or as a festive side dish.  



3 tbsp Foodin Extra Virgin olive oil
1 tbsp Foodin apple cider vinegar
1 tsp Dijon mustard
1 tsp sweetener of choice such as syrup
½ tsp Foodin fine Himalayan crystal salt  

A few citrus according to taste such as 1 grapefruit, 1 sweetie, 1 mandarin, 1 orange. 
A bunch of greens
Small bunch of rucola
Foodin walnuts 


Whisk the vinaigrette ingredients in a bowl until smooth. 

Slice the citrus fruit. 

Spread the greens on a serving plate and arrange the sliced citrus on top. 

Drizzle with the vinaigrette and sprinkle crushed walnuts generously on top.
