This Warm Potato Salad is super delicious! Made with baked and spiced potatoes and tossed with radish and arugula bits and a herb dressing. Served warm and just so tasty.

INGREDIENTS

Potato Salad:
1kg potatoes
2 tbsp Foodin olive oil
1 tsp Foodin French Herbs
Salt & Pepper
100g radishes
100g arugula
1 red onion
Spring onion

Sauce:
½ dl Foodin olive oil
2 tbsp Foodin apple cider vinegar
1 tbsp Foodin coconut sugar
2 cloves garlic
1 package of fresh coriander
Salt & Pepper

RECIPE

Heat the oven to 200°C.

Cut the potato into thinner slices and place on a baking sheet-covered pan. Toss some olive oil and add the French herbs spice and salt & pepper. Bake in the oven for about 30-40 minutes, until crispy. Let cool slightly.

For the sauce, add the olive oil, apple cider vinegar, and coconut sugar to a bowl and blend. Shred the garlic and cut the coriander and add to the sauce. Add salt & pepper according to taste.

Slice the radishes, arugula, red onion, and spring onion. Place the potatoes on a serving plate, and top with radishes, arugula, red onion, and spring onion. Drizzle the sauce over and enjoy.

P.S. If you are not a fan of coriander, feel free to swap it for any other fresh herb you like.
