Thai Tom Kha taohu soup is an aromatic, satisfying and nourishing soup ready in 20 minutes. The original soup is made with kha, which means galangal, a special spice related to ginger used in Asian cuisine. For this soup there is no need to hunt for spices, because you can get everything from Foodin! Tom Kha taohu soup is spiced with Foodin organic ginger powder, mild curry, umami sauce and spicy Curry-lemon cashews. 

INGREDIENTS 

100 g shiitake  

2 bell peppers 

300 g marinated tofu or smoked tofu 

1 onion 

Lemongrass (about 2 tbsp chopped) 

Foodin Extra Virgin olive oil 

2 tsp Foodin ginger powder 

2 tsp Foodin mild curry powder 

1 liter vegetable broth 

1 package (330 ml) Foodin coconut milk 

1 tbsp Foodin lemon juice 

1 tbsp Foodin umami sauce 

Toppings for the soup: spring onion, fresh chili and Foodin dry roasted spiced Curry lemon cashews  

RECIPE

Slice the shiitake and chop the bell pepper and tofu into bite-size pieces. Dice the onion. 

Prepare the lemongrass by cutting off the dry ends and peeling a couple of layers. Slice the softer part into small pieces until you have about 2 tbsp chopped. 

Warm up olive oil in a saucepan and sautee the onions for a few minutes. Add the spices (including the lemongrass), mushrooms, bell peppers and tofu and mix everything together. 

Pour the vegetable broth and the coconut milk into the saucepan. Bring to a boil and then simmer on low-medium heat under a lid for about 10 minutes. Add the lemon juice and umami sauce, give the soup a stir and then taste. Add salt or other spices to taste if necessary. 

Enjoy the soup with chopped spring onion, fresh chili and curry-lemon cashews.
