Sweet potato fries are easy to make crispy in an air fryer. Make the fries in two batches: one seasoned with aromatic Foodin barbeque spice and the other with Foodin Provence herbs. Enjoy these delicious fries with homemade aioli and vegan mayonnaise.

INGREDIENTS

500 g sweet potato 

2 tsp Foodin Extra Virgin olive oil 

1 tsp Foodin Barbeque spice 

1 tsp Foodin Provence herbs 

Salt to taste 

Aioli 

2 cloves of garlic 

1 egg yolk 

2 tsp Foodin lemon juice 

About 1 dl canola oil or about 0,5 dl Foodin Extra Virgin olive oil and 0,5 dl canola oil  

1/4 tsp (or to taste) salt 

Vegan mayonnaise 

0,5 dl aquafaba (the liquid from a can of chickpeas) 

2 tsp Foodin lemon juice 

1 tsp honey or other liquid sweetener 

1/2 tsp Dijon mustard 

1/4 tsp (or to taste) salt 

About 1,5 dl canola oil 

RECIPE

Preheat the air fryer to 200 C. 

Peel and slice the sweet potato into thin sticks. 

Place half of them in a bowl and add about 1 tsp olive oil, barbeque spice and a few pinches of salt. Mix until thoroughly coated. 

Place the fries in one layer in an air fryer and fry at 200C for 6 minutes. Flip the fries and cook for another 5-6 minutes or until all fries are soft in the middle with a crispy outer layer. The total frying time depends on the thickness of the fries and on the power of the air fryer.  

Repeat with the other batch of fries but use Provence herbs as a spice. 

While the fries are in the air fryer prepare the two mayos: aioli and vegan mayonnaise. 

Crush the garlic cloves.  

Separate one egg yolk into a bowl and whisk it with the lemon juice. 

Pour the oil slowly little by little into the egg yolk-lemon juice mixture while whisking at the same time. Finally, add in the crushed garlic and salt. Whisk until the aioli is smooth and has a nice thick texture. Let set in the refrigerator. 

With an immersion blender blend together the aquafaba, lemon juice, honey, Dijon and salt until the liquid has turned into foam. Add the oil little by little while blending and blend until the mixture is thick as mayonnaise. 

If the aioli or vegan mayo is too thick, add liquid such as water or lemon juice. If the aioli or vegan mayo is too thin, thicken it with more oil. 

Enjoy the fries with the aioli and vegan mayonnaise.
