This fresh strawberry-feta-pecan salad is easy and quick to make and the taste is just right! Strawberries and feta are a classic pair, which is combined in this salad with caramelized pecans and a refreshing citrus vinaigrette. This salad is perfect for lunches, summer cookouts and dinner parties!

INGREDIENTS

Salad:
100 g fresh spinach
100 g fresh arugula
1 dl strawberries
50 g feta cheese
Spring onion

Caramelized Pecans:
1 dl Foodin Pecan Nuts
2 tbsp Coconut Nectar
Flake salt

Vinaigrette:
½ dl Foodin olive oil
2 tbsp Foodin apple cider vinegar
1 tbsp Foodin lemon juice
1 tbsp coconut nectar
1 tbsp Dijon mustard
Salt & Pepper

RECIPE

Start by caramelizing the pecans.

Place the flake salt in a pan and dry roast the pecans for a few minutes. Add the coconut nectar and turn off the heat. Let cool.

Make the vinaigrette by adding all the ingredients in a jar and shake or mix with a fork.

Place the spinach, arugula, and strawberries in a bowl. Crumble the feta cheese and top with spring onion and caramelized pecans. Serve with vinaigrette.
