Spinach rice, spanakorizo, is a creamy Greek risotto type of rice dish which is made a la Foodin with a nutritious mix of red and black rice. Spinach rice is excellent served with marinated roasted vegetables or grilled food and can also be enjoyed as a main course with feta.


500 g fresh spinach 

The white part of leek 

2 garlic cloves 

Foodin Extra Virgin olive oil 

1,5 dl Foodin Rice Mix, rinsed 

4 dl vegetable broth 

2 tbsp Foodin lemon juice 

3 tbsp fresh dill, chopped 

For serving: feta 


Rinse and dry the spinach. 

Sautee the spinach in olive oil until it wilts a little. Set it aside. 

Chop the leek and garlic. Sautee them in olive oil for a few minutes. Add Foodin Rice mix and stir everything together. 

Add the vegetable broth and cook the rice under a lid on low-medium heat for about 35 minutes or until the rice is cooked through. 

To the cooked rice, add the lemon juice, dill and spinach and let simmer on low heat for 5 minutes gently stirring. 

Serve the spinach rice with crumbled feta.
