Shahi tofu tastes amazing with a smooth sauce made from Foodin Bruschetta spiced dry roasted cashews. Serve the warming sauce with pan fried tofu and Foodin Rice mix.

INGREDIENTS 

250 – 300 g marinated tofu 

About 2 tbsp Foodin Extra Virgin olive oil (for frying the tofu and for the onions and garlic) 

1 onion, diced 

2 cloves of garlic, diced 

2 tsp Foodin Madras curry 

1 tsp Foodin cumin powder 

½ tsp Foodin ground cardamom 

½ tsp Foodin Ceylon cinnamon 

1/8-¼ tsp Foodin chili powder 

½ tsp Foodin salt 

500 g tomato passata 

120 g Foodin Bruschetta cashews 

About 1 dl Foodin coconut milk 

For serving:

Foodin Rice Mix, naan bread and fresh cilantro 

RECIPE

Dry and cut the tofu into bite size cubes. Fry the tofu in oil for a few minutes and set aside. 

Sautee the onions and garlic in oil for a few minutes. Add the spices and stir on low heat for a minute or two. 

Add the salt, tomato passata and Foodin Bruschetta cashews. Let simmer under a lid for 15 minutes. Then blend everything until smooth with an immersion blender or in a blender. 

Add the fried tofu and about 1 dl coconut milk. Bring to a boil and remove from heat. 

Serve the shahi tofu with cooked Foodin Rice mix, naan bread and fresh cilantro.
