Aquafaba – the miracle liquid from a chickpea can is wonderful in baking and desserts. Did you know you can whip up a delicious fluffy mousse with just a few ingredients? This mousse tastes like both smooth and velvety dark and white chocolate, and it is all vegan and gluten-free! 


About 8 portions depending on the size of the dessert cup  

1,5 dl liquid from a chickpea can 

2 tsp Foodin lemon juice 

1 dl Foodin birch sugar 

Foodin white chocolate Herkkuisa spread 

Foodin hazelnut-raw chocolate Herkkuisa spread 


Drain the liquid from the chickpea can into a clean ceramic or glass bowl. Whisk the liquid for 8-10 minutes or until it is thick and white. Add the lemon juice and then the birch sugar little by little while whisking. Whisk for another minute or two. 

Whisk the room temperature Herkkuisa spreads in separate bowls for a few minutes to make them easier to mix. Combine the white chocolate Herkkuisa with half of the fluffy whip folding gently together and then repeat with the chocolate Herkkuisa.  

Divide the mousse into dessert cups by adding first the white chocolate layer and then the raw chocolate mousse.  

Put in the refrigerator to set for a few hours and take out of the fridge for about 30 minutes before serving.
