Frying doughnuts in an air fryer is easy and the results are delicious! Simply brush the doughnuts with oil or melted vegan butter after frying and roll them in sweet Foodin birch sugar to get the lovely crunch. To make the doughnuts even more scrumptious fill them with smooth Herkkuisa raw chocolate spread!

INGREDIENTS

About 22 small doughnuts 

3 dl / 180 g Foodin light rice flour 

2 dl / 90 g Foodin almond flour 

2 dl / 100 g gluten-free oat flour 

1,5 dl / 135 g Foodin xylitol / birch sugar  

2 tsp Foodin ground cardamom 

About 1 tsp or the zest of one lemon  

2 tsp baking powder 

¾ tsp Foodin sea salt 

1 pack (11 g) dry yeast 

1 tbsp 

1,5 dl gluten-free plant-based milk such as gluten-free oat milk 

2 dl water 

3 tsp Foodin psyllium powder 

50 g melted butter or oil (such as Foodin coconut oil) 

Oil to help roll the dough balls

 

After frying: 

Melted vegan butter or oil to brush the doughnuts 

Foodin xylitol / birch sugar to coat the doughnuts 

Foodin raw chocolate Herkkuisa to fill the doughnuts 

RECIPE

In a bowl, mix the flours, birch sugar, cardamom, lemon zest, baking powder, salt and dry yeast.  

Warm the plant-based milk and water to 42 C and whisk in the lemon juice and psyllium powder. Let set for a few minutes until the mixture thickens.  

Combine the liquids with the dry ingredients and mix with a wooden spoon. Add the melted butter and knead until the dough is combined.  

With the help of oil in your hands roll the dough into small balls and place on parchment paper. Let the dough balls rise in a warm place for about 20 minutes. 

Preheat the air fryer to 180 C.  

Place the dough balls into the air fryer so that there is room for each doughnut (about 6 at a time or dependind on the size of the air fryer). Fry for about 8-10 minutes. Check the doughnuts after 7-8 minutes and fry 1 minute at a time if they are not yet dark golden brown. Repeat until all the doughnuts are fried.  

After baking while they are still warm, brush the doughnuts with melted butter or oil and roll them in birch sugar. Let the doughnuts cool down for about 10-15 minutes before filling them with raw chocolate Herkkuisa. 

Make a small hole on the side of the doughnut and with a narrow piping tool pipe the Herkkuisa inside the doughnut.  

The doughnuts are best on the day of baking.
