Gluten-free, vegan and yeast-free bread rolls are easy to make with Foodin gluten-free flours, coconut oil and grated carrots. This is a great way to use old carrots and reduce food waste!
INGREDIENTS
150 g carrots, appr.3 carrots
80 g (1 dl melted) Foodin coconut oil
2 dl Foodin almond flour
2 dl Foodin quinoa flour
2 dl gluten-free oat flour
1 tsp Foodin psyllium powder
1 tsp salt
1 tsp baking powder
2 dl warm water
RECIPE
Preheat the oven to 200 C.
Grate the carrots with the smallest hole of the grater. Melt the coconut oil.
In a bowl, mix together the flours, psyllium, salt, baking powder. Add the grated carrot, melted oil and warm water. Knead everything together for a few minutes and let set for 10 minutes.
Roll the dough into 10 smallish balls and flatten a bit on the parchment paper. The dough is supposed to be a bit sticky so use oil or water to make the rolling easier. Bake the rolls in the oven for 20 minutes.
Let them cool for a while after baking.
These rolls are best enjoyed fresh.
