Mildly seasoned tomato lentil soup is the perfect quick weekday meal! Add umami flavor to the tomato soup with Foodin sundried tomates. Make the soup more satisfying and creamier with Foodin red lentils and coconut milk.

INGREDIENTS

1 big onion or 2 smaller ones 

1 clove of garlic 

Foodin olive oil for cooking 

2 dl Foodin sundried tomatoes chopped into smaller pieces 

2,5 dl Foodin red lentils

2 cans of crushed tomatoes (appr.2 x 400 g) 

1 liter of vegetable broth (1 liter of water with 1 vegetable broth cube, the sundried tomatoes add more saltiness to the soup) 

2 tsp Foodin Madras Curry –powder 

2 tsp Foodin coconut sugar 

1 can (330 ml) Foodin coconut milk 

For serving: Foodin dry-roasted Rosemary Cashews and fresh herbs 

RECIPE

Chop the onions and garlic and cook them in olive oil in a saucepan for a few minutes. Add the Foodin sundried tomatoes, lentils, crushed tomatoes, vegetable broth, Madras Curry –powder and coconut sugar. Stir and let simmer on medium heat without a lid for about 20 minutes or until the lentils have softened. 

Add coconut milk to the soup and blend everything with an immersion blender until smooth. 

Enjoy the soup with dry-roasted cashews and fresh herbs such as parsley or cilantro.
