A plant-based Christmas is easy to prepare! This spicy protein rich seitan “ham” with a creamy cashew butter based mustard sauce is the perfect star of the Christmas table.
INGREDIENTS
4 dl gluten flour
1,5 tbsp Foodin BBQ spice
1,5 tbsp Foodin paprika spice
1 tsp garlic powder
¼ tsp black pepper
2 tsp salt
3 dl water
0,5 dl Foodin Extra Virgin olive oil
2 tbsp Foodin umami sauce
Mustard sauce
3 tbsp Foodin cashew butter
2 tsp dijon mustard
¼ tsp salt
0,5 dl water (or more if you want the sauce thinner)
For serving (optional)
Fresh parsley
Lingonberries or cranberries (frozen)
RECIPE
Preheat the oven to 175 C.
In a bowl, mix the gluten flour, chickpea flour and all the spices. Add the water, oil and the Foodin umami sauce.
Knead the dough with your hands for a few minutes and shape it into a long round “ham”. Wrap the seitan “ham” into aluminum foil and place it on a baking dish.
Cook it in the oven for 45-50 minutes. Check the seitan after 40 minutes of cooking so that it doesn’t get too dry.
Mix the mustard sauce ingredients in a bowl with a little whisk.
Serve the seitan sliced with the creamy mustard sauce.
You can serve the seitan on a bead of parsley and lingonberries or cranberries for a festive look.
