The secret to a nourishing delicious kale salad is to massage the kale leaves soft with lemon juice, oil and salt. Add fennel, grapes and Foodin salad mix made of nuts, seeds and dried goji berries to brighten up the salad.
INGREDIENTS
About 150 g bunch of kale
1,5 tbsp Foodin lemon juice
1 tbsp Foodin Extra Virgin olive oil
about ¼ tsp salt
1 fennel

RECIPE
Shred the kale leaves from the stem and discard the stem. In a bowl, massage the kale leaves with lemon juice, oil and salt until soft. Chop the fennel and halve the grapes. Mix everything together with about 0,5 dl Food organic salad mix. Assemble the salads in individual bowls or cups.
