Kimchi is a traditional Korean dish featuring fermented and salted vegetables such as napa cabbage. You can make a quick version of kimchi in less than 30 minutes and use it in fried rice. INGREDIENTS
Rice
6 dl water
Vegetable broth cube
3 dl Foodin Rice Mix
Quick kimchi
400 g napa cabbage
2 tsp Foodin ginger powder
1 crushed garlic clove
1 tsp Foodin salt
1 tbsp Foodin apple cider vinegar
2 tbsp gochujang paste
Fried rice
Shallot onion
About 4 dl kimchi
1-2 tsp Gochujang paste 1-2 tl (or to taste, depending on how spicy/hot you want the fried rice)
Cooked rice
200 g frozen green beans
Chopped spring onion
0,5 tsp or to taste Foodin salt
1 tbsp toasted sesame seed oil
RECIPE
Cook the rice according to package directions and set aside. You can also cook the rice a day before and store it in the fridge.
Prepare the quick kimchi by chopping and slicing the cabbage. Mix the cabbage and the spices all together with your hands so the cabbage softens. Store the kimchi in a clean glass jar in the refrigerator for about 30 minutes.
Dice the shallot onion and sautee it in oil for a few minutes. Add the kimchi and gochujang paste and cook for another few minutes.
Add the rice and cook for about 2-3 minutes. Mix in the green beans and green parts of the spring onion, salt and sesame seed oil. Fry for another few minutes until.
Enjoy the kimchi rice with sesame seeds, spring onion and Foodin chili garlic cashews.
