You can have a fiesta on weekdays too! Foodin red lentils and Fiesta nuts and fruits mix is the perfect filling for weekday tacos, with minumum effort. Chop up vegetables and crumble feta while the lentils are cooking. Add Fiesta nuts and fruits and your fiesta may begin! 

INGREDIENTS 

2 dl Foodin red lentils 

About 1/2 tsp salt 

Also: 

Vegetables such as tomatoes, cucumbers, bell peppers, lettuce 

(gluten-free) tortillas 

salsa 

(vegan) crumbled feta 

Fresh cilantro 

Foodin Fiesta nuts and fruits 

RECIPE

Rinse and cook the lentils according to the package directions. Add salt to the cooking water before cooking. Check the lentils at the end of the cooking period so they won’t become too soft. 

Chop the vegetables and toast the tortillas in a dry hot pan for about 30 seconds per side.  

Assemble the tacos: add salsa sauce, then the cooked lentils, vegetables, crumbled feta and fresh cilantro. Sprinkle Fiesta nuts and fruits on top.
