Gluten-Free Cinnamon Roll Sugar Cake with Herkkuisa frosting – super delicious flavor combo! This naturally gluten-free recipe is easy to prepare with Foodin almond and rice flour, aromatic vanilla powder and cardamom as well as Ceylon cinnamon-coconut sugar mix. The flavor which is close to perfection is topped off with hazelnut-raw chocolate Herkkuisa.
INGREDIENTS
Cake:
3 eggs
1.5 dl Foodin coconut sugar
100g butter (or margarine)
3.5 dl Foodin almond flour
2 dl Foodin whole grain rice flour
1 tsp Foodin vanilla powder
1 tbsp Foodin psyllium husk
2 tsp baking powder
2 tsp Foodin cardamom powder
2 dl Turkish yogurt (or oat gurt)
1 tbsp Foodin coconut flakes
Filling:
4 tbsp Foodin coconut sugar
3 tsp Foodin cinnamon
Topping:
1 tsp Foodin coconut oil
RECIPE
Heat the oven to 175°C. Melt the butter and let cool a bit. Beat eggs and coconut sugar with an electric beater until fluffy. Mix all the dry ingredients in a bowl and incorporate gently into the sugar-egg mix. Add the butter and the yogurt gently. You want to keep the dough as airy as possible, so no hard mixing. Mix the ingredients for the filling. Butter a cake pan and coat it with coconut flakes. Add ⅓ of the dough into the pan, and add the filling. Add the rest of the dough and bake in the oven for 25-30 minutes. Let it cool completely before you remove it from the pan. Heat the coconut oil and the Herkkuisa until melted and swirl over the cake before serving. Enjoy.
