The Italian classic bruschetta is best now when local tomatoes are juicy, sweet and flavorful. Make a traditional bruschetta with high quality Extra virgin olive oil from Foodin, garlic, basil, salt and pepper. Or add more flavor to the classic with simple ingredients and spices and enjoy on top of toasted crispy bread.
INGREDIENTS
500 g tomatoes
1-2 garlic, minced or squeezed
About 10 basil leaves, chopped
3 tbsp Foodin Extra Virgin olive oil
¼ tsp or to taste salt
Pinch of black pepper
Add more flavor:
Chopped red onions
(vegan) mozzarella
For serving: bread, garlic
RECIPE
Chop the tomatoes and remove most or some of the seeds to reduce the amount of liquid.
In a bowl, mix together the chopped tomatoes, basil, garlic, olive oil, salt and pepper. Set aside.
Preheat the oven to 200 C. Toast slices of bread in the oven until golden brown and crispy. If you want more garlic flavor, scrub the oven warm bread with a garlic clove.
Place a good dollop of tomatoes on top of a slice of bread. Add more flavor as you wish: red onions, oregano, chili powder and/or (vegan) mozzarella.
Note: It is best to enjoy the brushcetta immediately so the bread remains crispy and warm (and not soggy).
