Three marinades suitable for both vegetarian and meat-based dishes is all you need for a delicious meal enjoyed with a classic fresh yogurt-based sauce – tzatziki. These marinades are suitable for grilling, oven roasting and pan frying and they are flavored with an array of beautiful spices and herbs from Foodin.
INGREDIENTS
Herb oil marinade
2 tbsp Foodin Extra Virgin olive oil
1 tbsp Foodin lemon juice
2 tsp Foodin oregano
1 tbsp fresh thyme
1 crushed garlic clove
½ tsp Foodin sea salt or Foodin Himalayan crystal salt
Yogurt marinade
1 dl Greek natural yogurt
1 tbsp Foodin Extra Virgin olive oil
1 tbsp Foodin Honey and ginger apple cider vinegar
1 tbsp Foodin umami sauce
2 tsp Foodin oregano
1 crushed garlic clove
½ tsp Foodin sea salt or Foodin Himalayan crystal salt
BBQ-marinade
3 tbsp Foodin Extra Virgin olive oil
2 tbsp tomato pyre
½ tbsp Foodin lemon juice Foodin lemon juice
1 tsp honey
2 tsp Foodin BBQ spice
½ tsp Foodin sea salt or Foodin Himalayan crystal salt
Tzatziki
¾ cucumber (n.200 g)
2 crushed garlic cloves
1 tbsp Foodin Extra Virgin olive oil + a drizzle on top of tzatziki
1 tsp Foodin Apple cider vinegar
2 tbsp fresh chopped dill + more on top of tzatziki
½ tsp Foodin sea salt or Foodin Himalayan crystal salt
400 g Greek natural yogurt
RECIPE
Marinades
Mix all the marinade ingredients in three separate bowls.
The herb-oil marinade is especially suitable for vegetables or meat such as chicken. Let the vegetables marinate in the refrigerator for at least 30 min and the meat overnight.
Both the yogurt marinade and the BBQ-marinade are especially suitable for tofu or meat such as chicken. Let them marinate for at least 30 min, but preferably overnight.
Roast in the grill or oven or fry in a pan with plenty of Foodin olive oil.
The marinated vegetables in the photos were roasted first in the oven for 10 minutes in 200 C and then finished on a pan in olive oil.
The marinated tofu in the photos was roasted in the oven in 180 C for about 40 minutes, rotating the tofu pieces every 15 minutes. Note: dry the tofu well before marinating.
Tzatziki
Grate or blend the cucumer and squeeze out the extra liquid. Mix together the crushed garlic, oil, vinegar, dill and salt.
Mix the squeezed, grated or blended cucumber and the oil-spice mix to the yogurt. Let the tzatziki set in the refrigerator for about 30 minutes. Drizzle olive oil and add dill on top before serving.
Serve the tzatziki with the marinated vegetables and tofu (or meat) and spinach rice.
