This wonderful Christmas flavored cheesecake is made with only 3 ingredients! You only need cream cheese, cookies and Foodin Gingerbread Herkkuisa, a delicious gingerbread-spiced raw chocolate spread. This recipe was inspired by Emma Ivane’s 3 ingredient cheesecake.

INGREDIENTS

120 g (gluten-free) Digestive cookies 

2 jars Foodin Pipariherkkuisa 

600 g natural cream cheese 

(a pinch of salt) 

RECIPE

Preheat the oven to 140C. Line a 20 cm springform pan with parchment paper. Warm the Foodin Pipariherkkuisa in the microwave for about 20 seconds at a time to make it more easy to mix. Crush the Digestive cookies into tiny crumbs. This is best done with a blender or the bowl part of an immersion blender. Add about 4 tbsp of Pipariherkkuisa and blend until you have a solid dough. You can also add a pinch of salt to the dough to highlight the sweetness. And note: the dough doesn’t need to be completely smooth, crumbs are ok, as long as it holds together nicely. Press the dough onto the bottom of the springform pan. 

In a bowl with a spoon, mix the cream cheese and one full jar of warmed Pipariherkkuisa. Spread the mixture on top of the crust. From the other jar, spoon the rest of the Pipariherkkuisa and swirl decorations on top of the cheesecake. Bake in the mid rack of the oven for 40 minutes. Let the cake cool down and store it in the fridge preferably overnight. Once chilled, the cake is easier to slice into nice pieces.
