In the summertime we eat pasta as a salad! This delicious and nutritious salad is filled with healthy ingredients like Foodin green lentils and dry roasted cashews, baby spinach, rucola and lots of juicy tomatoes.

INGREDIENTS

2 dl Foodin green lentils (dry) 

400 g (gluten-free) pasta 

2 small shalot onions or 1 big onion 

Foodin olive oil for cooking 

1 dl Foodin sundried tomatoes, chopped into small pieces 

1 dl pitless olives 

400 g small cherry or plum tomatoes, halved 

About 100 g of baby spinach and rucola  

Salad dressing 

5 tbsp Foodin olive oil 

3 tbsp Foodin lemon juice 

2 tsp Foodin oregano 

2 tsp Dijon mustard 

1 tsp honey 

¼ -½ tsp salt or to taste (note: the sundried tomatoes, olives and cashews also contribute to the saltiness of the salad)  

With the salad: a few bags of Foodin dry roasted spices cashews such as Bruschetta cashews 

RECIPE

Cook the Foodin green lentils according to package directions. 

Cook the pasta according to package directions. 

Cook the onions in olive oil until they are golden brown. 

To the cooked pasta, add the green lentils, onions and chopped sundried tomatoes. Let the salad cool for about 15 min or more and then add the rest of the ingredients: olives, tomatoes, baby spinach and rucola. 

Whisk the salad dressing in a bowl and mix it in the pasta salad. Sprinkle spiced cashews on top of the salad and serve the salad with the rest of the cashews.
