Marinated Zucchini Salad is a delightfully easy and delicious side dish that is suitable as a fresh flavor pair for summer grilled dishes! Citrus marinade and roasted almonds complete the taste experience with fresh leaf parsley and crumbled feta cheese on top.
INGREDIENTS
2 medium-sized zucchinis
2 tbsp Foodin olive oil
2 tbsp Foodin apple cider vinegar
1 tbsp Foodin lemon juice
1 tsp coconut nectar
Salt & Pepper
Fresh leaf parsley
Toasted almonds:
Flake salt
½ dl Foodin almonds
1 tbsp Foodin olive oil
RECIPE
Shave the zucchini with a mandolin or a cheese slicer. Place in a bowl with olive oil, apple cider vinegar, lemon juice, coconut nectar, and salt & pepper. Let marinate for 2 hours in the fridge.
Toast the almonds in a dry pan with flake salt for a few minutes. Turn off the heat, add the olive oil, and let cool.
Serve the marinated zucchini with crumbled feta cheese, chopped almonds, and fresh-cut leaf parsley. Amazing side dish to the endless summer BBQs.
